As I’ve mentioned previously, I will review this slow cooker cookery book as a whole.
Once I’ve run through a few more recipes from it.

My Attempt

Following the recipe and using the short ingredients list. As well as the tomatoes, it included short grain/risotto rice, basil leaves, garlic, olive oil, salt and pepper. And that’s it!

This is an easy veggie recipe to follow. It does require you to leave the filling to stand at room temperature for an hour. To allow the juices from the tomato pulp to absorb into the short grain (risotto) rice. Before putting into the slow cooker. And then cook in the slow cooker for 4 to 5 hours on the low setting.

Though this used just a few simple ingredients. This was a surprisingly flavourful tomato dish. Good for a vegetable side dish. Or as a vegetarian lunch with a green salad.

I cooked this tomatoes stuffed with rice in my Morphy Richards 3.5L Slow Cooker.
