Morphy Richards Slow Cooker Chicken Recipe

There are 4 chicken recipes in the Morphy Richards Sear and Stew Slow Cooker manual. For my first chicken recipe to try out, I picked their Chicken and Mushroom Casserole. Mainly, as I already had most of the ingredients to hand. And because I love chicken AND mushroom!

Chicken and Mushroom Casserole
Ingredients
  • 4 chicken quarters.
  • 30g butter.
  • 2tbsp plain flour.
  • 1 large onions, finely chopped.
  • 3 celery sticks, thinly sliced.
  • 250g mushrooms, thinly sliced.
  • 1 garlic cloves, crushed.
  • 375ml chicken stock.
  • 4tbsp cream (optional).
  • salt and pepper.
Method
  1. Coat the chicken with flour. Melt the butter in the Cooking Pot and fry the chicken until golden brown on all sides.
  2. Add the onion and celery and gently fry until softened but not browned.
  3. Add the mushrooms and garlic and stir in the stock. Bring to the boil and season.
  4. Transfer the Cooking Pot into the Base Unit, cover with the Glass Lid.
  5. Ensure that the chicken and vegetables are immersed. Cover with the Glass Lid and cook for approximately 5-7 hours on the Medium setting.
  6. Before serving, stir in the cream.

  • All of the chicken recipes in the manual require a pre-browning step. As this model of Morphy Richards slow cooker has a hob-safe removable cooking pot. This is easy to do. Plus as the pot itself is lightweight, it isn’t too heavy to lift, when all the ingredients are in.
  • The method was very easy to follow. The benefit of having a removeable hob-safe cooking pot, made this a one pot meal. And less washing up.
  • But the preparation time was, for me a bit too long. What with all the chopping of vegetables. And browning of the chicken. It took me about 45 minutes, at a reasonable pace!
  • The end result was tasty moist fall apart chicken. This was definitely a good basic recipe to see the potential of slow cooking chicken. And it made 4 large portions as a main meal.
  • So, a good basic slow cooker chicken recipe. And with just a few tweaks, could be made exceptionally good! I’ve a round-up of tips below. That I think would to make this dish better. As well as faster to prepare, healthier, even tastier and more interesting.
Chicken and Mushroom Casserole – Additional Tips
  • You could remove the skin. Or use skinless chicken pieces. If you want to shorten the time required to brown the chicken. And this would also reduce the fat content of the dish.
  • You could also shortcut this by using prepared vegetables. Such as pre-sliced mushrooms and onions. This would reduce the prep time, but may cost a bit more.
  • I did use garlic infused oil, instead of fresh garlic for an easy shortcut.
  • Also I used jointed thighs and drumsticks, rather than quarters. This made it easier to brown the chicken skin on all sides. Even though this step takes a bit of time. You definitely need to get a golden brown colour on the chicken skin. Not just because the final dish will look more appetising. But this will also add depth of flavour to the final dish.
  • This Chicken and Mushroom Casserole would go well with pasta, mashed potatoes or rice. Especially brown or wild rice, which would add texture and interest. And would stretch the amount to feed even more people.
  • I would say this dish could also do with some fresh herbs, added just before serving. Such as parsley or dill.
  • You could also add frozen peas to the pot, near the end of the cooking time. To add more colour and more veggies into the dish. Similarly, you could served this with steamed green beans or broccoli.
  • The flavour could also be lifted to another level. Especially if you are using skin-on chicken and the cream. For example by adding white wine, Dijon mustard or lemon juice, at step 3 of the method.
