Slow Cooker Lemon Pudding

Based on the magic lemon pudding from Mary Berry’s Complete Cookbook (Available on *Amazon UK).

I used the same ingredients and method as the recipe linked above.

But instead of baking this lemon pudding in the oven, I made this crock pot lemon lava cake in a Morphy Richards 3.5 L Slow Cooker (See my review).

Cook on High for 2 hours, until the sponge cake has cooked through, the top is dry and golden brown. And the lemon sauce is thick and bubbling in the bottom of the slow cooker pot! Serve warm with cream, custard or vanilla ice cream.
