This post details how to cook brown rice in a slow cooker.
A simple recipe to make steamed, non-sticky brown rice using a slow cooker.

Serve hot with your fave curry or stew. Or use to make a brown rice salad, perfect for a healthy vegetarian packed lunch.

How to Cook Brown Rice in a Slow Cooker

Based on a simple recipe from Adventures in Slow Cooking by Sarah DiGregorio (See my book review). This book is especially good for its slow cooker grains and pulses recipes.

She uses foil to cover the rice inside the slow cooker pot. This then actually allows the rice to steam. Which prevents the rice from becoming sticky whilst allowing the rice to cook through properly.

As this recipe uses the absorption method. Where all of the water should be absorbed as the rice cooks, with no excess water at the end of the cooking time. It is best to measure out the rice by volume, and not by weight.

Ingredients (4 servings)

  • 250 ml basmati brown rice.
  • 350 ml boiling water.
  • 1 tb vegetable oil.
  • Pinch of salt.

How to Cook Brown Rice in a Slow Cooker – Made into a Healthy Brown Rice and Vegetable Salad

Method (Total Cooking Time: 1¾ to 2 hours)

  1. Add the rice, water, oil and salt to the slow cooker pot. Stir.
  2. Place a piece of foil – large enough to completely cover the rice and water. Lay it on top of the surface of the water, so that it is just touching the water. Then cover the pot with the lid.
  3. Cook on High for 1¾ to 2 hours. Once the rice is cooked and the water completely absorbed. Turn off the slow cooker, and using a fork fluff up the rice grains.
  4. Serve hot with your fave stew or curry. Or make this into a brown rice salad – see my recipe note below.

Recipe Notes

  1. Make this into a brown rice salad, stir in your favourite vinaigrette (e.g. oil, vinegar, salt, pepper, Dijon mustard, a hint of garlic and fresh herbs), whilst the rice is still warm. Leave to cool and then add any ready-to-eat veggies. Such as diced carrots, sliced spring onions, diced red pepper and defrosted frozen sweetcorn. To make an easy and healthy alternative packed lunch.
