Cooking a Whole Chicken in a Slow Cooker - UK Recipe

This method of cooking a whole chicken in a slow cooker.
Is based on a BBC Good Food slow cooker recipe.
And is a great way to cook a whole chicken until it is tender and moist.
Along with herbs, root vegetables and lemons.
Which you can then use in a variety ways including lunch dishes or main meals.

Cooking a Whole Chicken in a Slow Cooker

This whole chicken slow cooker recipe is based on the Chicken, leek and parsley pie recipe. From the BBC Good Food: Slow Cooker Favourites Recipe Book (See my review).

Where you cook the chicken, whole in the slow cooker. With the vegetables, herbs and other flavourings of your choice. And then you can use the cooked whole chicken in whichever way you like. This is a convenient and easy to cook a whole chicken, slow and low. Until it moist, soft, tender and full of flavour. Then portion it up or shred it and use in a variety of ways. Such as in a pie, or add it to a pasta sauce or use it into a curry!

Ingredients (4 to 6 servings)

  • 2 tb olive oil (optional).
  • 1.5 kg whole chicken.
  • 1 chopped carrot, onion and celery stick.
  • 1 lemon, cut into 6 wedges.
  • 2 tb tomato puree.
  • Salt and pepper.
  • Dried and/or fresh herbs of your choice. I used 1 tb Italian seasoning and 2 sprigs of fresh rosemary.
  • About 1 litre of boiling water.

Method (Total Cooking Time: Approx’ 5 to 6 hours)

  1. This is an optional step, but I prefer to brown the skin a bit before putting the chicken into the slow cooker. You don’t have to do this, if you don’t have time. Though by doing this browning step it will add more flavour to the final dish. To brown the skin, heat the olive oil in a large frying pan. Once hot, place the chicken into the pan, breast-side down. And then keep turning, using tongs until the skin is golden brown all over (or as much as you want). This should take about 5 minutes.
  2. Put the whole chicken into the slow cooker pot. Add the rest of the ingredients.
  3. Pour over the boiling water, until the chicken is almost covered. Cover with the slow cooker lid. Cook on High for about 5 to 6 hours. Until the chicken is completely cooked through. And the juices run clear.
  4. Carefully remove the chicken from the slow cooker pot, cover with foil. And leave to rest for half an hour, before using as required.
