What I particularly like about this cookery book.
Is that not only are all of their slow cooker recipes. Designed to use just 5 extra ingredients. Along with a reasonable and minimal storecupboard list.
They also offer alternatives to change-up recipes with different flavours or cuisines.

Once I’ve made a few more recipes from this slow cook book. I’ll review it, as a whole.

My Attempt

So anyway this sticky toffee pudding slow cooker recipe includes apple. But the book also includes an alternative version using banana. This is the one I tried.

Using the usual sponge cake recipe i.e. butter, sugar, eggs and self-raising flour. Plus milk and mashed banana. Into a buttered souffle dish (14cm (5.5 inches) wide and 9cm (3.5 inches) high). Topped with butter, muscovado sugar and boiling water, which will eventually make a toffee sauce underneath the cooked sponge cake.

Then loosely cover the dish with foil. And pour boiling water into the main cooker pot. So that the water comes up to halfway up the side of the dish.

Unlike their slow cooker lentil soup recipe, which I reviewed previously. I followed this slow cooker sticky toffee banana cake exactly as described in the cookbook. The method was easy and quick to prepare. And the timings correct, taking 3 hours to cook through.

The cake was well-risen! And the toffee sauce bubbling up the sides. And it was delicious!

The only problem I had when making this pudding. Was that the dish I used was slightly smaller than that specified in the cook book. And as I didn’t butter it, the cake stuck to the foil cover.

Next time I make this sticky toffee pudding (apple or banana). I’m going to try making it in a pudding basin. Even though this is bigger than what is stated in the recipe. There will at least be more room for the cake to rise, without sticking to the foil cover.
