Slow Cooker Lentil Soup Recipe Review with Orange Lentils
This is a review of the slow cooker lentil soup recipe.
From the Just 5 Ingredients cookery book, Slow Cooker edition.
One of the slow cooker vegetarian recipes. Using orange lentils, aubergine and tomatoes.
This is one of the first recipes that I tried from this Just 5 slow cooker cook.
Which is another of my newly acquired cookery books. Specifically for the slow cooker.

Slow Cooker Lentil Soup – UK Recipe

My Attempt

First off, I didn’t include aubergines in this orange lentil soup. In the original recipe, they fry slices of aubergine until golden. Before adding to the pot along with the main ingredients. i.e. orange lentils, tinned tomatoes, cumin, salt, pepper and vegetable stock.

As I didn’t have an aubergine, I skipped this step/addition. And anyway I just wanted make this lentil soup in one-step. So I also cut corners by using garlic-infused oil and a couple of chopped spring onions. Skipping the pre-frying stage altogether. Just threw all the ingredients into the pot. And turn on the slow cooker.

Review

Apart from the first step of frying vegetables. I did follow the lentil soup recipe as it is in the Just 5 Ingredients Slow Cooker book. Including cooking it for 6 to 8 hours on the low slow cooker setting.

The result was a very delicious simple lentil soup. I think, this soup was tasty enough even though I skipped the frying step. And it was substantial enough in itself as a mains dish.

But I can see how adding the aubergine would have made this into a complete one-pot vegetarian main meal. Especially as the slow cooker pot I’m using can be used on the hob for the frying bit.

The method was easy to follow and the timings spot-on for my slow cooker. I cooked this lentil soup recipe in my Morphy Richards 3.5L Slow Cooker.
