Slow Cooker Lemon Sponge – UK Recipe

Ingredients (4 to 6 slices)
  • Zest and juice of 2 lemons.
  • 3 tbsp soft brown sugar.
  • 100g margarine, plus extra for buttering the pudding bowl.
  • 100g caster sugar.
  • 2 large eggs at room temperature.
  • 175 g plain flour.
  • 1 tsp baking powder.
  • Pinch of salt.
  • 1 tsp vanilla extract, optional.

I made this slow cooker lemon steamed sponge pudding in a Morphy Richards Accents Sear and Stew 3.5 L Slow Cooker (See my review).

Method (Total Cooking Time: 3 hours)
  1. Generously butter a 1.5 litre pudding basin.
  2. Finely zest and juice the lemons.
  3. In a small bowl add the soft brown sugar with half the lemon juice. Mix until the sugar is dissolved. Pour into the bottom of the pudding basin.
  4. In a large bowl add the rest of the ingredients including the other half of the lemon juice. Mix until well blended.
  5. Pour the cake batter into basin. Smooth the top so that it is level. Place a circle of buttered parchment paper on top of the sponge mix. Then loosely cover the bowl with a square of buttered foil.
  6. Place the pudding basin into the slow cooker. Pour just boiled water, around the basin, so that it comes halfway up the sides.
  7. Cover with the slow cooker lid. Cook on High for 3 hours. Until the sponge is well-risen and cooked through. Test this by using a skewer or toothpick, it should come out clean.
  8. Remove the pudding basin from the slow cooker with oven gloves. Leave for 20 minutes before turning it out on to a plate.
  9. Serve warm or at room temperature with warm custard or cold double cream.

Recipe Notes
  1. This lemon steamed sponge pudding has a sticky lemony gooey-ness, around the sponge. Not really a sauce, as such.
  2. You could also make this slow cooker recipe into a citrus pudding with an orange and a lemon, instead of the 2 lemons.
