Slow Cooker Simple Bread Rolls – UK Recipe

This was my first attempt at making yeasted bread in my slow cooker. I have now updated this post, with tweaks after my second run at this recipe. And have now include a proving stage, as this made a better, softer bread roll.

Ingredients (Makes 6 large or 12 small dinner rolls)
  • 350 g strong white bread flour.
  • 15 g butter.
  • 1 tb honey.
  • 1 tb sugar.
  • 190 ml (¾ cup) milk.
  • 60 ml (¼ cup) just boiled water.
  • 1 tsp fast-action yeast.
  • 1 tsp fine sea salt.

I made this slow cooker bread roll recipe in a Morphy Richards Accents Sear and Stew 3.5 L Slow Cooker (See my review).

Method
  1. Mix the milk, hot water, butter and honey in a jug.
  2. In a bowl add the flour, yeast, sugar and salt.
  3. Slowly pour in the lukewarm milk mixture to the flour and mix.
  4. Use your hands to bring it together into a dough.
  5. Turn out onto a lightly floured surface. And knead for 10 minutes until smooth and elastic. Use additional flour sparingly, if it is too sticky. Shape into a smooth rounded ball, place in an oiled bowl, cover with oiled cling film.
  6. Leave to prove for an hour, until doubled in size.
  7. Gently knock back air in the dough. Lightly grease the slow cooker pot with oil. And if you’ve not got a non-stick pot like mine, line it with parchment paper. Split the dough into 6 or 12 equal pieces. Roll each piece into a smooth round ball. Place the dough in to the pot, leaving a space in between each.
  8. Cover with the lid and leave to rise for half an hour.
  9. Put the pot into the slow cooker base unit. Place a sheet of kitchen paper over the top of the pot, (to absorb any excess steam that collects on the lid) held in place by the lid. Cook on High for 1 hour and 15 minutes.
  10. Using oven gloves, tip out the bread in one piece. The base should now be golden brown. Turn it over, and cook upside down for a further 30 minutes. Until the top is also golden brown and the bread is cooked through.
  11. Turn out onto on a cooling rack for 30 minutes or so, before pulling apart into rolls and serving.
