Slow Cooker Tuna Spaghetti Recipe with Tomatoes & Corn
This is an easy slow cooker tuna spaghetti recipe. Made with storecupboard and freezer ingredients. Including tinned tuna and tomatoes. Plus dried herbs and frozen sweetcorn (or peas). Made in a Morphy Richards slow cooker. This is a one-pot slow cooker pasta dish. Where you first make a slow cooked tomato and herb sauce. Then add the pasta and tuna to the pot, near the end of the cooking time.

Slow Cooker Tuna Spaghetti – UK Recipe

Using as a guide, linguine with tuna sauce and seafood pasta recipes. From BBC Good Food: Slow Cooker Favourites Cookbook (see my review). I’ve come up with this easy tuna pasta recipe. Using ingredients that you’re most likely to have to hand.

Ingredients (Serves 4)
  • 1 tb olive oil.
  • 2 spring onions, chopped.
  • 1 tsp paprika.
  • ½ tb dried herbs, e.g. Italian mixed herbs.
  • 390 g carton chopped tomatoes.
  • 150 g frozen corn (or peas).
  • ½ tsp fine sea salt.
  • Ground black pepper, to taste.
  • 600 ml hot water (or chicken stock).
  • 300 g uncooked spaghetti, each broken into 3 pieces.
  • 2 tins of tuna chunks in spring water (approx 400 g).
  • To serve: chopped parsley and grated cheese.

Method
  1. Add all the main ingredients, except the spaghetti and tuna to the slow cooker pot.
  2. Cook on High for 3 hours.
  3. After this time, add the broken-up spaghetti and tuna. Stir well, making sure that the pasta is spread out and not clumped together.
  4. Cook for a further 30 minutes. Turn the slow cooker off and leave for 10 minutes.
  5. Check that the pasta is cooked through. And serve, sprinkled with parsley and grated cheese on top, if you like.
Recipe Notes
  1. Swap the frozen corn for peas or any other frozen veg that you’d like.
  2. For added crunch and texture, you could serve topped with crispy breadcrumbs. Fry at the last-minute – breadcrumbs, lemon zest and chopped rosemary in a little olive oil. Until golden brown and toasted.
