Slow Cooker Fruit Cake UK Recipe My version of Mr Kiplings Country Slices

This slow cooker fruit cake recipe. Is my attempt at re-creating the lightly spiced fruit cakes. Like Mr Kipling’s country slices or manor house cake. But made in a slow cooker.

Slow Cooker Fruit Cake UK Recipe

Ingredients (10 to 12 slices)

  • 150 g margarine.
  • 2 large eggs, at room temperature.
  • 75 g caster sugar.
  • 75 g soft light brown sugar.
  • 225 g plain flour.
  • 1½ tsp baking powder.
  • 1 tsp ground cinnamon.
  • 1 tsp mixed spice
  • ¼ tsp g nutmeg
  • Pinch of salt
  • 2 tb milk
  • 1 tb lemon and/or orange zest, finely zested.
  • 125 g sultanas or other dried fruit.
  • 1 tsp flour.

Method (Total Cooking Time: 2 hours)

  1. Lightly grease the slow cooker pot, with margarine or butter. Line the base with parchment paper.
  2. In a large bowl add all of the ingredients except the zest and dried fruits.
  3. Mix by hand or using a hand mixer until well blended.
  4. In a small bowl, mix the dried fruit with a teaspoon or so of flour. Shake off the excess flour using a sieve.
  5. Add the dried fruit and zest to the cake. And fold them in.
  6. Pour the cake mix in to the slow cooker and smooth over the top, to level it.
  7. Cover with a piece of kitchen paper, placed under the slow cooker lid.
  8. Cook on High for 1½ hours. Turn out onto a board. Remove the parchment paper. Then put the cake back into the slow cooker upside-down (to brown the top of the cake). Replace the kitchen paper and lid and cook on High for another 30 minutes.
  9. After this time, the cake should be done. Test by poking it with a skewer or toothpick, which should come out clean if it is completely cooked.
  10. Turn out onto a cooling rack. And leave to cool completely, before slicing and serving.

Recipe Notes

  1. I use kitchen paper to absorb the excess steam that collects under the lid when slow cooking. The cake will not brown otherwise.
  2. Dusting the dried fruit with a little flour before adding to the cake mix, helps to hold the fruit throughout the cake. And prevents the fruit from sinking to the bottom.
