Leftover Roast Pork Slow Cooker Recipe Idea

Ingredients – Pork Paprika (Serves 2)
  • 200 g leftover roast pork loin, cut into thick strips.
  • 125 g chestnut mushrooms, quartered.
  • 3 spring onions, sliced.
  • 2 tsp paprika.
  • 1 tb tomato puree.
  • salt and pepper.
  • 400 ml chicken stock.
  • 2 tsp cornflour mixed with 1 tb cold water.
  • Sour cream, add to taste.
  • Chopped parsley.
Method
  1. Place all the ingredients except the sour cream and parsley, into the slow cooker pot.
  2. Cook on Low for 3 hours, until the pork is completely tender.
  3. Check for seasoning, and adjust to taste. Similarly, add sour cream to taste.
  4. Sprinkle over some chopped parsley.
  5. Serve with cooked plain rice or egg noodles. And steamed green veg, such as brocoli.
