Leftover Roast Pork Slow Cooker Recipe Idea
Ingredients – Pork Paprika (Serves 2)
- 200 g leftover roast pork loin, cut into thick strips.
- 125 g chestnut mushrooms, quartered.
- 3 spring onions, sliced.
- 2 tsp paprika.
- 1 tb tomato puree.
- salt and pepper.
- 400 ml chicken stock.
- 2 tsp cornflour mixed with 1 tb cold water.
- Sour cream, add to taste.
- Chopped parsley.
Method
- Place all the ingredients except the sour cream and parsley, into the slow cooker pot.
- Cook on Low for 3 hours, until the pork is completely tender.
- Check for seasoning, and adjust to taste. Similarly, add sour cream to taste.
- Sprinkle over some chopped parsley.
- Serve with cooked plain rice or egg noodles. And steamed green veg, such as brocoli.
