Slow Cooker Vanilla Shortbread Recipe

The basic slow cooker vanilla shortbread recipe. Is a simple sweet treat. Using just a few storecupboard ingredients (and no eggs needed). For ideas of a few variations on this traditional vanilla shortbread recipe. See my recipe notes below.

Ingredients (12 chunky biscuits)
  • 120 g cold butter, cubed.
  • 180 g plain flour.
  • 60 g caster sugar.
  • 2 tsp vanilla bean paste or seeds from a vanilla pod.
  • 2 tb cold water.

Method (Total Cooking Time: 2 hours)
  1. In a large bowl rub together the butter and flour, until is resembles fine breadcrumbs.
  2. Stir in the sugar, then the cold water. The dough should now have the texture of damp sand.
  3. Line the slow cooker pot with a double layer of parchment paper. To cover the base and up the sides a bit. Or use 2 round cake parchment liners.
  4. Tip the dough mix into the lined slow cooker. Dampen your fingertips with a little water. And press the mix into a level layer over the base of the parchment paper, and make sure that the top is smooth.
  5. Cover with a piece of kitchen paper, held in place by the slow cooker lid. Cook on High for 2 hours. Until the sides and base are lightly golden and the top is dry.
  6. Lift out the shortbread with the parchment paper. Leave to cool completely on a cooling rack. Cut into about 12 chunky fingers or pieces.
Recipe Notes – Variations
  1. Chocolate chip shortbread: Follow the recipe above, adding 100 g of chocolate chips or chunks after you’ve added the cold water.
  2. Cranberry and orange shortbread: Follow the recipe above, but omit the vanilla. After you’ve added the cold water, stir in 40 g of dried cranberries and the finely grated zest from an orange. You could also use pink grapefruit zest instead of orange zest.
  3. Lemon and cardamom shortbread: Follow the recipe above, but omit the vanilla. After you’ve added the cold water, stir in the crushed seeds of 5 cardamom pods (discard the husks) and the finely grated zest from one lemon.
