Slow Cooker Coconut Jam Sponge Cake UK Recipe

This slow cooker coconut jam sponge cake.
Uses the all-in-one cake method to make a basic sponge.
And then cooked in a slow cooker.
Decorated with raspberry jam and desiccated coconut.
Best served with hot (pink) custard!

Slow Cooker Coconut Jam Sponge Cake

If you want to enhance the coconut flavour in this coconut jam sponge. Add desiccated coconut and vanilla or almond extract to the cake batter.

Slow Cooker Coconut Jam Sponge Cake

Classic British sponge cake made in a slow cooker

Ingredients

Cake Batter

  • 115 g soft butter or margarine
  • 115 g caster sugar
  • 2 eggs
  • 140 g plain flour
  • 1 tsp baking powder
  • 50 g desiccated coconut, optional
  • 2 tbsp milk
  • 1 tsp almond or vanilla extract, optional

Topping

  • 2 tbsp raspberry jam
  • Desiccated coconut

Instructions

  • Put all of the ingredients into a large mixing bowl, except the desiccated coconut. Mix thoroughly, without over-beating until well-combined and smooth. Fold in the 50 g desiccated coconut into the cake batter, if using.
  • Line the slow cooker with parchment. (See recipe note 1 below.) Pour the cake batter into the pot. Level out the top.
  • Cover with a large piece of kitchen paper, held in place by the lid. (See recipe note 2 below). Cook on High for 1½, check if cooked and golden, otherwise continue cooking for about another 30 minutes.
  • To check if it is cooked: insert a skewer into the centre of the cake – it should come out clean. Turn off and leave for 10 minutes. Before transferring on to a wire rack to cool.
  • Once completely cooled, spread the top with raspberry jam. Sprinkle over desiccated coconut. Serve sliced, on its own. Or with custard.

Notes

  • I used a deep 22 cm round cake liner, which fits my oval 3.5l slow cooker pot.
  • Placing a piece of kitchen roll, under the lid. Will absorb the excess steam whilst cooking. Otherwise the cake will just steam, and won’t get golden brown.
  • If you want to enhance the coconut flavour in this coconut jam sponge. Add desiccated coconut and vanilla or almond extract to the cake batter.
