Slow Cooker Coconut Milk Rice Pudding


This slow cooker coconut milk rice pudding recipe. Made rich and creamy with tinned coconut milk. Is a tropical twist on the old-fashioned British dish. Perfect served with tropical fruit. And toasted coconut.

Slow Cooker Coconut Milk Rice Pudding UK Recipe

Ingredients (Serves 6)
  • 75 g pudding rice.
  • 1 x 400 ml tin coconut milk.
  • 200 ml milk.
  • 4 tb soft brown sugar.
  • 1 tsp vanilla extract.
  • To serve: banana, mango or pineapple sliced.
  • Lime zest.
  • Toasted desiccated coconut.

I made this slow cooker coconut milk rice pudding recipe in a Morphy Richards Accents Sear and Stew 3.5 L Slow Cooker (See my review).

Method
  1. Butter the sides of the slow cooker pot.
  2. Pour the coconut milk into a bowl and whisk until smooth. Then put into the slow cooker pot, along with the rice, milk, sugar and vanilla in the slow cooker. Stir until well mixed.
  3. Cook on Low for about 3 hours. Until the rice is cooked through.
  4. Serve with the fruit. And sprinkled with toasted coconut and lime zest.
