Easy Slow Cooker Red Lentil Soup

This is an easy red lentil soup, full-flavoured, hot, spicy and vegetarian! Which you can cook in the slow cooker on either the High or Low setting, see below for details. And if you have some cooling yoghurt and fresh coriander to hand, add to each bowl when you serve it up.

Ingredients (Serves 4)
  • 200 g red lentils, well-rinsed until water runs clear.
  • 1 tsp ground turmeric.
  • 1 tsp ground coriander.
  • ½ tsp chilli powder or to taste.
  • Fresh ginger to taste, finely chopped (optional).
  • Salt e.g. fine sea salt about ½ tsp or to taste.
  • Ground black pepper, to taste.
  • 750 ml boiling water.
  • Serve with plain yoghurt and chopped fresh coriander, optional.

I made this slow cooker red lentil soup in a Morphy Richards Accents Sear and Stew 3.5 L Slow Cooker (See my review).

Method (Total Cooking Time: High 3 to 4 hours/Low 6 to 8 hours)
  1. Add all the ingredients to the slow cooker. Stir well. Cover with lid.
  2. Cook on High for 3 to 4 hours. Or on Low for 6 to 8 hours. Until the lentils are completely soft and creamy.
  3. Stir and serve up in bowls. Top with a spoonful of plain yoghurt and/or fresh coriander.
