Slow Cooker Saffron and Pesto Brown Rice

This slow cooker pesto brown rice. Is a very easy and delicious rice-based side dish, infused with tomato pesto and saffron. And made in a slow cooker! A great way to use your slow cooker to make a side dish without any further stirring or intervention. Just put it on and leave it. Whilst using your oven to roast chicken, vegetables etc, to serve with it!

Nigella's Lemon Polenta Cake Made in a Slow Cooker This is my slow cooker version of Nigella’s lemon polenta cake.
A flourless zesty lemon cake made with polenta (cornmeal) and ground almonds.
And soaked with a lemon syrup, once cooked.

This slow cooker polenta UK recipe is a simplified method of making creamy polenta. Without the need for constant stirring, as you would need to do if making it on the hob. I use fine cornmeal to make this polenta dish. Which seems to be more readily available in UK supermarkets (usually in the West Indian section). This basic polenta is a perfect side-dish to serve with tomato-based sauces or rich meaty stews. And a useful dry storecupboard standby, as an alternative to mashed potatoes.

This slow cooker turkey and pork sausage meatballs recipe with spicy tomato sauce. Is my UK version of a recipe from the Adventures in Slow Cooking cook book. These light and easy to make meatballs are stuffed with mozzarella. And slow cooked in a spicy tomato sauce. This is an easy family meal to make, that you can serve with crusty bread, pasta or creamy polenta.
