My Attempt
This is the second store cupboard recipe cooked in my Morphy Richards 3.5L Slow Cooker. This time I used the traditional lemon curd recipe, from the Just 5 Ingredients Slow Cooker Book. This slow cooker lemon curd is also included in 500 Slow Cooker Recipes by Sara Lewis (See my Book Review).
Slow Cooker Lemon Curd Recipe Review
Following this slow cooker lemon curd recipe was easy. And needed very few ingredients; lemons, butter, eggs and sugar. Yet made the best lemon curd I’ve ever made. With a better, smoother and thicker consistency than when I’ve made this type of curd on the hob. The only thing that took a while was straining the eggs into the lemon mix. As you need to add the eggs slowly, to ensure it is incorporated into the warm-ish lemon-butter-sugar mixture without ending up with scrambled eggs.
The end result was a lovely, thick and smooth lemon curd. Delicious and tangy. As with previous slow cooker recipes I’ve made from this Just 5 cook book. I halved the quantity, which also meant cooked it for half the time stated in the recipe. i.e. 1 hour and 30 minutes of slow cooking.
And I made enough lemon curd to fill 2 x 200 g jars. These keep for up to 4 weeks in the fridge.
