This slow cooker plum cake UK recipe. Includes sticky, spiced plums surrounded by light sponge cake. Perfect served warm with custard or thick cream. This recipe also works well with other similar fresh fruit. So use whatever is in season, such as apricots, apples, pears or rhubarb.

Slow Cooker Plum Cake UK Recipe

Ingredients (10 slices)
  • 400 g plums, about 8. Quartered and stone removed. See recipe notes for other fruit you could use.
  • 125 g plus 2 tb caster sugar.
  • 1 tsp balsamic vinegar.
  • 1 tsp ground cinnamon or mixed spice, see recipe notes below.
  • 125 g soft butter.
  • 2 medium eggs.
  • 1 tsp almond or vanilla extract, see recipe notes below.
  • 190 g plain flour.
  • 10 g cornflour.
  • 1½ tsp baking powder.
  • 2 tb milk.
  • Icing sugar.

Method (Total Cooking Time: 2½ hours)
  1. Lightly grease the slow cooker pot. Line the base with a strip of parchment paper, so that it comes up the sides at both ends.
  2. In a small bowl, mix the plums with the 2 tablespoons of sugar, balsamic vinegar and spice/cinnamon.
  3. To make the cake batter: in a large bowl cream together the butter and sugar. Then beat in one egg at a time, adding a tablespoon of flour (from the measured amount) after each addition, to stop it from curdling.
  4. Fold the rest of the flour, plus the cornflour and baking powder.
  5. Add the milk, vanilla/almond extract and half of the fruit. Stir gently, until just combined.
  6. Pour the cake mix into the pot. Place the remaining plums on top of the batter. (Note: They will sink into the batter once cooked.)
  7. Cover the slow cooker pot with the lid, with a piece of kitchen paper trapped just under the lid (to absorb the excess steam).
  8. Cook on High for 2 hours.
  9. Use the parchment paper to pull out the cake and put it on a board. Then return the cake, upside-down without the parchment, back into the slow cooker. So that you can cook and brown the top of the cake. This should take about 30 minutes. By this time the cake should be completely cooked through and the fruit soft and sticky.
  10. Cool a bit, then dust with icing sugar. Serve warm or at room temperature with thick cream or custard.
Recipe Notes
  1. Use similar seasonal fruits. This plum cake recipe would also work with apricots, peaches, apples, pears or rhubarb. Vary the spices and flavours to best suit the fruit you use. For example, almond extract works especially well with stoned fruits. Whilst ground ginger would work well with plums, pears and apples.
  2. The fruit will sink into the batter as it cooks.
