My Attempt

I’ve baked many carrot cakes before, my favourite method is Nigella’s carrot cake. Where she uses ground walnuts, which like ground almonds helps to keep the cake moist for longer.

This slow cooker carrot cake, is an alternative version to the apple and pecan cake recipe. In the 200 family slow cooker recipes book. And even though the list seems long, they use mostly storecupboard ingredients

The method is easy, and the dish used to cook the carrot cake is a souffle dish (15cm wide, 8cm high). Prep work includes grating carrots and chopping walnuts. But otherwise, making the batter is straight-forward, as you would normally make a cake. Plus some sweet spices – cinnamon and ginger.

As with the sticky toffee pudding (see below). Put the cake mix into a buttered lined dish. Cover loosely with buttered foil. And into the slow cooker pot. Then filling the cooker pot with boiling water to come halfway up the dish.

Slow Cooker Carrot Cake Recipe Review

The result was a very moist light carrot cake sponge. Gently spiced, sweet with carrots and nutty with the chopped walnuts. The cake was well-risen and cooked within the time specified (3.5 to 4 hours). My cake took 3.5 hours. Though, again had a problem with the foil sticking to the top.

And I did have problems with getting the cake out of the dish. It either needs the sides of the dish to also be lined, as well as the base. OR needs to be well-buttered. Once out of the dish, cooled and covered in a lovely cream cheese icing. The end result was excellent, a delicious spiced carrot cake with walnuts.

Definitely will do this recipe again. But next time I’ll try cooking it in my 1 lb loaf tin. And see if that works better, when turning it out.
