Slow Cooker Sausage & Pasta Recipe

This recipe is based on a Good Food slow cooker recipe. See my recipe notes below for a link to my review of this top cookbook. I’ve also included a link to the oven-baked version, which is available online.

The main changes I’ve made to the recipe were that I swapped the rigatoni, courgettes and mozzarella. With penne pasta, mushrooms and parmesan, as that is what I had to hand. Also I found I had to increase (3x more than in the original recipe) the amount of liquid and the cooking time for the pasta to cook properly! (But this maybe because I changed ingredients.)

Ingredients (3 to 4 servings)
  • 1 tbsp olive oil.
  • 4 good-quality sausages, (e.g. 78% pork).
  • 250 g mushrooms, sliced.
  • 1 or 2 garlic cloves, finely sliced.
  • Pinch of dried chilli flakes.
  • 400 g chopped tinned tomatoes.
  • 1 tb tomato puree, optional.
  • Pinch of sugar.
  • Salt and pepper.
  • 200 g penne pasta, uncooked.
  • 750 ml just-boiled water.
  • To serve: grated cheese, e.g. cheddar, parmesan or mozzarella.

Method (Total Cooking Time: 1½ hours)
  1. Heat the oil in a large frying pan. Squeeze the sausagemeat out of the skins, into the frying pan. Break up into little chunks, as it fries. Fry for about 8 minutes until golden and cooked through.
  2. Put the cooked sausage into the slow cooker pot. Add the rest of the ingredients. Make sure the pasta is immersed in the liquid.
  3. Cover with the lid. Cook on High for 90 minutes, until the pasta is cooked.
  4. Place portions into individual ovenproof dishes. Top with the cheese and grill until golden and bubbling.
