Slow Cooker Chocolate Brownie UK Recipe

This is a basic slow cooker brownie recipe. And makes a very squidgy and soft brownie. Perfect served as it is, maybe just with a dusting of icing sugar.

Ingredients (9 pieces)
  • 100 g dark chocolate broken up into pieces.
  • 120 g butter.
  • 100 g white sugar.
  • 100 g soft brown sugar.
  • 2 medium eggs.
  • 1 tsp vanilla extract.
  • 25 g cocoa powder.
  • 50 g plain flour.
  • Icing sugar, to serve.

I made this slow cooker Chocolate Brownie recipe in a Morphy Richards Accents Sear and Stew 3.5 L Slow Cooker (See my review).

Method (Total Cooking Time: 2 hours plus cooling time)
  1. Melt the chocolate and butter in a heat-proof bowl, over a pan of simmering water. Stir to mix, take off the heat and leave to cool a bit.
  2. Line the base of your slow cooker pot with foil and then with parchment paper.
  3. Beat the sugars into the chocolate-butter mixture. Then beat in the eggs and vanilla. And then fold in the rest of the ingredients. If you want to add chocolate chips or chopped walnuts, add them in at this point.
  4. Pour the batter into the slow cooker pot. Cover with lid AND a piece of kitchen paper, held in place just under the lid. (The kitchen paper is needed to absorb any excess steam, and prevent the brownie from being soggy.)
  5. Cook on Low for 1½ hours. At this point, the batter should be cooked at the edges, but still quite squidgy in the middle. But NOT actually wet when pressed with a finger. Remove the kitchen paper and lid, and continue to cook for another 30 minutes.
  6. Turn the cooker off, and leave it as it is for an hour.
  7. Then take the slow cooker pot out of the base and leave to cool completely.
  8. Serve, dusted with icing sugar.
