Nigella's Guinness Gingerbread made in a Slow Cooker


Nigella’s Guinness gingerbread makes a lovely Christmas spiced, rich and sticky gingerbread. This post details how I cooked it in a slow cooker. Based on a recipe from a Nigella BBC Christmas programme.

Slow Cooker Nigella’s Guinness Gingerbread

This gingerbread recipe is included in Nigella’s Kitchen: Recipes from the Heart of the Home* cook book.

Apart from using half the quantities, in the recipe (linked above). I followed the recipe exactly.

This makes a very runny sticky gingerbread batter. And you definitely need to line the slow cooker pot with parchment paper. Even if the pot is non-stick.

I made Nigella’s Guinness Gingerbread in a Morphy Richards Accents Sear and Stew 3.5 L Slow Cooker (See my review).

Cooked on High for 1.5 hours i.e. until it is cooked through. To test this, use a skewer to check that the centre of the cake is no longer wet batter. And the skewer comes out clean.
