Moroccan Spiced Whole Chicken

The addition of chickpeas, makes this into a one-pot family meal.

Ingredients (Serves 4 to 6)

  • 1.5 kg whole chicken.
  • 2 tsp vegetable oil.
  • ½ tsp ground cinnamon.
  • ½ tsp ground ginger.
  • Salt and pepper.
  • ½ tsp ground turmeric.
  • ¼ tsp cayenne pepper.
  • 1 tsp cumin seeds, crushed.
  • 1 onion or 4 spring onions, sliced.
  • 400 g tinned chickpeas, drained.
  • Lemon, cut into 6 pieces.

Method (Total Cooking Time: 5 to 6 hours on High or 8 to 10 hours on Low)

  1. Use kitchen paper to pat dry the chicken all over. Mix the oil and spices to make a paste. And rub this paste all over the chicken.
  2. Put the onion, chickpeas and 200 ml water into the slow cooker pot.
  3. Place the chicken on top. Then tuck the lemon pieces in and around the chicken.
  4. Cover with the lid. Cook on Low for 8 to 10 hours or on High for 5 to 6 hours. Check if the chicken is completely done, by making sure the juices run clear and not pink. Once cooked turn the slow cooker off. Take the pot out of the base unit and leave it to stand for 30 minutes. Cut into portions and serve.
  5. The sauce/gravy though well-flavoured, will be quite thin in consistency. So if you want a thicker sauce, decant it into a saucepan. Put on the hob on a medium high heat. And either bring it to boil then simmer until it has reduced and thickened. Or for a shortcut, add cornflour mixed with cold water, before letting it simmer to get the gravy to your preferred consistency.

Recipe Notes

  1. You can also add dried fruit to this Moroccan spiced chicken. Such as apricots, prunes or sultanas.
  2. To make this meal stretch further and serve more people. Serve this chicken and chickpeas stew with couscous or Bulgar wheat.
